DIY Fresh Basil Herb Pesto

Ingredients for the basil pesto

1 cup walnuts, 4tsp minced garlic, 6 cups fresh basil, 1 cup fresh oregano, 1 cup fresh parsley, 2 Tbsp lemon juice, 1/2 olive oil, 1/2 cup grated Romano and Parmesan cheese, salt to taste

Step 1. Pre-heat your oven to 350 degrees

Step 2. Place your walnuts and minced garlic on a baking sheet with either a baking mat or parchment paper. Cook in the oven for 10-12 minutes. You can tell it is done when you smell the walnuts roasting.

Step 3. Put the roasted walnuts and minced garlic in a blender or food processor. Blend until it is well blended. You may need to scrape the sides a few times with a rubber spatula

Add basil to the blender

Add olive oil

Step 4. Add the fresh basil, lemon juice, and olive oil. Pulse down until you can add in the fresh oregano and parsley. Blend well

Step 5. Add the Romano and Parmesan cheese and a dash of salt to taste

Step 6. Continue to blend while scraping down the sides s needed until it is a smooth consistency

Step 7. Store in the fridge in an air tight container for a week or freeze it in ice cubes/freezer bags for about 6 months.
